A summer taste explosion

This drink is not prepared in just an afternoon. And that's a good thing! Because it's through fermentation that the summer berries in the strawberry cordial unleash their full flavor. Shaken with STROH, whisky, and lime juice, this daiquiri quickly becomes the favorite of every summer party.

Ingredients for 1 glass

For the fermented strawberry cordial

  • 350 g ripe strawberries
  • 100 g blueberries
  • 50 g honey
  • 5 g salt
  • 50 ml whey
  • 250 g sugar
  • 100 ml STROH 80

 

For the cocktail

  • 4 cl STROH 80
  • 1 cl peaty Islay malt whisky
  • 3 cl fermented strawberry cordial
  • 3 cl fresh lime juice
  • 1 cl simple syrup

 

Preparation

For the fermented strawberry cordial

  • Combine strawberries, blueberries, honey, salt, and whey, pressing and squeezing the berries in the process.
  • Then, fill a tall glass container (such as a flip-top jar) and cover with a very thin but continuous layer of mild olive oil (the olive oil protects against excessive oxygen exposure and adds texture to the final product).
  • Loosely cover the container and let it ferment for 2 to 3 days at room temperature (the mixture will start to bubble slightly and expand).
  • After fermentation, mix with sugar and STROH.

 

For the cocktail

  • Shake all ingredients vigorously with ice cubes and strain into a pre-chilled cocktail glass through a tea strainer (for a perfect result, strain the cocktail twice).
  • Garnish with seasonal berries and cocktail umbrellas, and serve chilled.

 

Tip: To make your own whey for the strawberry cordial, simply hang probiotic yogurt in a cheesecloth or kitchen towel. Gather the liquid whey that drips off and store it in a cool place or utilize it as a starter for lacto-fermentation.
