Canelés in praline size

Canelés are delicious French pastries with a caramelized crust and moist interior. Originally invented by French nuns 300 years ago, they owe their unique flavor to the combination of egg yolks, rum, and vanilla.

Ingredients for 30 Canelés

  • 1 liter milk
  • 50 g melted butter
  • 1 egg
  • 6 egg yolks
  • 500 g sugar
  • 250 g all-purpose flour
  • 250 g STROH 40
  • seeds from 1 vanilla bean

 

Preparation

  • Place all ingredients in a bowl and mix with a hand blender. Let it rest in the refrigerator for two days.
  • Preheat the oven to 160 °C fan.
  • Fill the greased silicone molds completely with the batter for baking.
  • Bake in the preheated oven for 70 minutes.
  • Allow the baked batter to cool, then remove it from the molds.
